Chamomile-Infused Chia Pudding with Mango Passion Fruit Curd

Ingredients

Chamomile Chia Pudding:
1 1/4 cup unsweetened plant milk
2 tbsp chamomile buds
1/4 cup Suncore Foods® Black Chia Seeds

Mango & Passion Fruit Curd:
1 medium size mango (cut into cubes)
1/2 cup filtered water
1 tbsp Suncore Foods® Sparkly Amber Passion Fruit Flakes
2 tbsp corn-starch + 2 tbsp water


Directions

1. Chamomile Chia Pudding – Heat up milk in a small saucepan. Transfer milk to a mason jar, add in chamomile buds. Let the milk infuse overnight in the chiller. The next morning, stir in chia seeds to the milk jar. Place it in the chiller until ready to be used.
2. Mango & Passion Fruit Curd – Place cubed mangoes, water and Suncore Foods® Sparkly Amber Passion Fruit Flakes in a blender, blend until very smooth. Strain mixture over a fine mesh shift directly to a saucepan. Add in cornstarch mixture. Cook over medium low heat until mixture has thickened.
3. To Assemble – Divide Suncore Foods® Black Chia Seeds into 3 equal portions; place cooked mango curd directly on chia pudding layer. Top with more fresh fruits. Enjoy!
