Matcha Pistachio White Chocolate Bars
2 cups all-purpose flour
1 ½ tbsp Suncore Foods® Organic Midori Jade Matcha Powder
½ tsp salt
1 cup unsalted butter (softened)
¾ cup powdered sugar
1 tsp vanilla extract
1 cup white chocolate chips (melted for topping)
⅓ cup raw pistachios (shelled and roughly chopped)

1. Prep your oven and pan — Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal later.
2. Whisk the dry ingredients — In a medium bowl, vigorously whisk together the all-purpose flour,
Suncore Foods® Organic Midori Jade Matcha Powder, and salt until the mixture is uniform and completely lump-free.
3. Cream butter and sugar — In a large bowl, beat the softened unsalted butter and powdered sugar together using an electric mixer until light, fluffy, and smooth. Stir in the vanilla extract.
4. Form the green dough — Gradually add the matcha flour mixture into your creamed butter. Mix on low speed just until a soft, vibrant green dough forms. Do not over mix.
5. Press and bake the crust — Press the dough firmly and evenly into the bottom of your prepared baking pan. Bake for 18 to 20 minutes until the edges are very lightly golden but the center remains bright green. Let it cool completely in the pan.
6. Melt and layer white chocolate — Melt your white chocolate chips in the microwave in 30-second bursts, stirring in between until completely smooth. Pour the melted chocolate evenly over the cooled matcha base, smoothing it with a spatula.
7. Garnish and chill — Immediately sprinkle the chopped pistachios over the wet white chocolate layer. Place the pan in the refrigerator for 20 to 30 minutes until the chocolate sets completely. Lift out using the parchment paper handles, slice into clean bars, and serve!
