Matcha Raspberry Chia Jam Sandwich Cookies

Good news for all matcha lovers! We have the perfect buttery, crispy, and wonderfully delightful Matcha Raspberry Chia Jam Sandwich Cookies for your cozy afternoon snack! Made with Suncore Foods® Midori Jade Matcha Powder which gives the cookies a beautiful green color and heavenly flavor combined with Suncore Foods® Black Chia Seeds for even more star power! Go get yourself some of these addictively scrumptious, buttery cookies. Enjoy!

Ingredients

Cookies:
60g butter of choice
45g powdered sugar
2 tsp Suncore Foods® Midori Jade Matcha Powder dissolved in water
120g all purpose flour
1 tsp vanilla extract
1/4 tsp salt

Raspberry Chia Jam:
1 cup fresh raspberries
1 tbsp Suncore Foods® Black Chia Seeds
2 tbsp sugar of choice
1 tbsp lemon juice or water


Directions

1. Cookies — In a stand mixer, cream the butter, powdered sugar, vanilla. Add in dissolved Suncore Foods® Midori Jade Matcha Powder, flour, salt, mix for dough forms. Cover dough with plastic wrap and chill in the fridge for 15 minutes. Preheat oven to 170c. Roll dough out onto a piece of parchment paper and cut out the dough using a cookie cutter. Bake cookies for 10 mins. Allow cookies to cool completely.

2. Raspberry Chia Jam — Place the raspberries and lemon juice into a saucepan over a medium heat. Mash the raspberries as they begin to heat up. When the raspberries have broken down to a saucy consistency. Remove from the heat and allow the mixture to cool a little before adding the Suncore Foods® Black Chia Seeds. Transfer the jam to a jar and allow it to cool completely. Once the jam has reached room temperature transfer it to the fridge for an hour to set.
