Let’s be real—the summer heat has definitely been hanging around, but we just found the most delightful, delicious, and absolutely gorgeous way to cool down! Yield: 4 to 6 Popsicles (depending on mold size)
1 tbsp Suncore Foods® Pink Pitaya Powder (add an extra teaspoon if you want an ultra-intense neon pink!)
1 can (13.5 oz) light coconut milk (or full-fat coconut milk for a creamier, ice-cream-like texture)
2 tbsp pure maple syrup or agave nectar (adjust to your preferred sweetness)
1 tbsp freshly squeezed lime juice (adds a refreshing, bright tang)
1 tsp pure vanilla extract (optional, for a smooth dessert flavor)
Optional add-in: 1/2 cup finely diced fresh dragon fruit or strawberries to press into the molds for added texture.

1. Blend — In a high-speed blender, combine the coconut milk, maple syrup, lime juice, vanilla extract, and
Suncore Foods® Pink Pitaya Powder.
2. Mix Until Vibrant — Blend on high for 30–45 seconds until the mixture is completely smooth, frothy, and a gorgeous, uniform bright pink.
3. Prep the Molds — If you are using fresh fruit add-ins, drop a few pieces of diced dragon fruit or strawberries into the bottom of each popsicle mold.
4. Pour — Carefully pour the pink pitaya mixture into your popsicle molds, leaving about a quarter-inch of space at the top to allow for expansion as they freeze.
5. Freeze — Insert your popsicle sticks. Place the molds flat in the freezer and let them chill for at least 4 to 6 hours, or ideally overnight, until perfectly solid.
6. Unmold & Enjoy — To easily remove the popsicles, run the outside of the molds under warm water for 10–15 seconds. Gently pull the sticks to release, and enjoy your sweet, refreshing treat!
