Ingredients
Tangzhong:
110g water
22g bread flour
Directions
1. Make Tangzhong - In a small saucepan, whisk together water and bread flour until no lumps remain. Over medium heat, cook mixture until it thickens into a paste, about 2 minutes. Transfer to a bowl and cool for 20 minutes.
2. Prepare the 3 Doughs - In 3 separate bowls, whisk together the dry ingredients until well combined. Next, add the milk and melted butter. Then divide the cooled tangzhong evenly among the 3 bowls.
3. Mix & Rest Dough - Mix the doughs into a shaggy ball. Cover and let rest for 30 minutes.
4. Knead Dough - On a floured work surface, knead each dough by hand, one at a time until smooth, about 5 minutes for each. If the dough becomes sticky, gradually add more flour.
5. Let Double - Place the dough in separate oiled bowls, cover with plastic wrap, and keep in a warm place until doubled in size, about 60 to 90 minutes.
6. Prep Loaf Pan - Lightly butter a pullman loaf pan and set aside.
7. Shape the Dough - Once the doughs have risen, divide each dough into 2 equal pieces, making a total of 6. Using a rolling pin, roll each ball into roughly 9x5 inch (23x12 cm) pieces. Layer the purple, pink and blue dough on top of one another, and using a pizza cutter or sharp knife, cut into 3 strips lengthwise, without cutting all the way through at the top. Finally, braid the dough, then pinch and tuck the ends together and place into the loaf pan seam side down. Repeat with the remaining dough.
8. Proof - Cover and let the loaf nearly double in size, about 40 to 45 minutes.
9. Preheat Oven - Toward the end of the rising time, preheat oven to 350F (180C).
10. Bake - Brush the loaf with milk or an egg wash and bake for 35 to 45 minutes or until a thermometer reads 190F (88C).
11. Cool - Cool the bread in the pan for a few minutes, then remove from the pan and cool completely on a wire rack. Slice and enjoy!
