Ingredients
Butterfly Pea Syrup:
1 cup water
1/2 tsp Suncore Foods® Blue Butterfly Pea Powder
1 tbsp maple syrup
Butterfly Pea Jelly:
200g water
A pinch of Suncore Foods® Blue Butterfly Pea Powder
1 tbsp sugar
3/4 tsp agar agar powder
To Serve:
Iced cubes
Lemon juice
Soda water
Sliced lemon
Directions
1. Blue Butterfly Pea Tea – Pour the hot water over the Suncore Foods® Blue Butterfly Pea Powder, leave to brew and cover with a lid for 5-8 minutes. Strain the mixture through a fine mesh sieve. Let cool completely.
2. Blue Butterfly Pea Jelly — Add water, Suncore Foods® Blue Butterfly Pea Powder, sugar to a saucepan, bring up to a boil. Add agar powder, and cook until dissolved, whisking constantly, continue to simmer for 1 minute. Turn off the heat. Strain mixture through a fine mesh sieve. Pour jelly into food container, refrigerate for 1 hour or until set. Cut into cubes.
