Yields 3–4 baguettes

Colorful Baguettes:
500g flour
12g salt
3g instant yeast
380g cold water
2½ teaspoons Suncore Foods® Blue Butterfly Pea Powder
4 teaspoons Suncore Foods® Purple Sweet Potato Powder

For Topping
White rice flour
½ teaspoon Suncore Foods® Purple Sweet Potato Powder

1. Mix the Dough – Add the flour, salt, yeast, and cold water to a mixing bowl. Using a stand mixer with a dough hook, mix the dough until it becomes smooth.
3. Divide and Color the Dough — Divide the dough into two equal pieces. Take one half and mix in the Suncore Foods® Blue Butterfly Pea Powder until the color is fully combined. Take the other half and mix in the Suncore Foods® Purple Sweet Potato Powder until evenly colored.
3. Strengthen and Rise — Perform one stretch and fold. 30 minutes later, stack the dough and perform a coil fold. 30 minutes later, perform another coil fold. After the folds, allow the dough to continue rising.
4. Pre-Shape — Gently shape each piece of dough into a round ball.
5. Refrigerate Overnight — Place the dough into a covered container and store it in the refrigerator overnight.
6. Rest the Dough — The next morning, remove the dough from the fridge and let it rest at room temperature for 15 minutes.
7. Shape the Baguettes — Shape each piece of dough into a baguette. Place the shaped dough onto a baguette pan.
8. Final Proof — Let the dough proof until it becomes puffy.
9. Preheat the Oven — Preheat your oven to 500°F. Place a pan filled with water inside the oven while it preheats to create steam.
10. Prepare for Baking — Lightly spritz the dough with water. Mix the white rice flour with ½ teaspoon of purple sweet potato powder. Dust this mixture over the top of the dough. Score the loaves with a sharp knife or blade.
11. Bake — Place the baguettes into the oven. Bake at 500°F for 15 minutes. Then lower the temperature to 450°F and bake for an additional 5 minutes. (Note: If your oven runs hot, reduce the temperature to 475°F immediately after placing the bread in the oven.)
