Matcha Chocolate Vanilla Cookies

Ingredients
Matcha Cookie:
40g dairy free butter
80g flour
40g powdered sugar
25g cornstarch
12g soy milk
5g Suncore Foods® Midori Jade Matcha Powder dissolved with soy milk
Chocolate Cookie:
40g dairy free butter
80g flour
40g powdered sugar
25g cornstarch
12g soy milk
8g cocoa powder
Vanilla Cookie:
40g dairy free butter
80g flour
40g powdered sugar
25g cornstarch
12g soy milk
2 tsp vanilla extract
Directions
1. In a stand mixer add flour, powered sugar, and butter, mixing until combined. Add in milk, vanilla extract, dissolved Suncore Foods® Midori Jade Matcha Powder/cocoa powder and mix until the dough comes together.
2. Wrap each cookie dough with cling wrap and refrigerate for 20 mins.
3. Roll out the dough into a 1 cm thickness. Cut the dough into strips, stack the strips, place cookie in the freezer for 20 mins. Slice the cookies and cut out the cookie with a cookie cutter.
4. Place cookies back in the fridge for 15 mins before baking.
5. Preheat oven to 140c. Bake cookies for 12-15 mins. Allow cookies to cool completely and serve.
