Purple Funfetti Focaccia:
430g lukewarm water
20g Suncore Foods® Purple Sweet Potato Powder
8g Suncore Foods® Lilac Taro Yam Powder
28g unsalted butter, melted
50g white sugar
2g instant yeast
2 tsp clear vanilla extract
480g bread flour
8g fine sea salt
½ cup rainbow sprinkles
Topping:
84g melted unsalted butter, for pan & topping focaccia
Rainbow sprinkles
Colorful Glaze:
125g powdered sugar
3 tbsp milk, plus more if needed
14g melted butter
1 tsp clear vanilla
1 tsp Suncore Foods® Cerise Prickly Pear Powder
½ tsp
Suncore Foods® Purple Sweet Potato Powder

1. Purple Funfetti Focaccia - In a large bowl, whisk together warm water,
Suncore Foods® Purple Sweet Potato Powder and
Suncore Foods® Lilac Taro Yam Powder until dissolved.
2. Whisk in melted butter, sugar, yeast, and vanilla and mix until combined.
3. Next, add the bread flour and salt, and using a dough whisk or spoon, mix until no dry pockets of flour remain. If the dough seems dry, you can add a bit of water. *Please note that the powders absorb a lot of water so if you add more powder, you may need to add a bit more water.
4. Cover with plastic wrap or a damp towel and let it rest for 30 minutes.5.
5. Perform a total of 4 sets of stretch and folds every 30 minutes. Dip your fingers into water, pick up one side of the dough, stretch it upwards, and fold it over itself. Rotate the bowl slightly and repeat until all sides are folded.
6. During the second set of stretch and folds, gradually add sprinkles as you fold the dough, covering as much of the bare dough as possible. After the final set of folds, let the dough rest, then cover and refrigerate for 12 to 48 hours.
7. Lightly butter and line a 9x13 inch metal baking pan with parchment paper. Then coat the entire pan with 3 tablespoons of melted butter.
8. Remove the dough from the fridge and gently loosen it from the sides of the bowl. Stretch and fold the dough into a ball and transfer it into your baking pan seam side down. Cover with plastic wrap that has been spray with oil and let it sit for 2 to 3 hours or until doubled in size. Do not overproof, as it will deflate during the dimpling process.
9. With 15 to 20 minutes left of proofing, preheat the oven to 450ºF (232ºC).
10. When you are ready to bake, pour 2 tablespoons of melted butter over the dough and lightly grease your hands. Using both hands, dimple the entire dough by pressing your fingers into the dough until you touch the bottom of the pan. Top with another 1 to 2 tablespoons of melted butter and add more sprinkles.
11. Bake for 20 to 25 minutes, or until the internal temperature reads 195ºF (90ºC). If you’re using stoneware or glass, it will take longer.
12. Let the focaccia sit in the pan for 5 minutes, then carefully transfer to a wire rack to cool for at least 1hour.
13. Colorful Glaze - In a small bowl, whisk together powdered sugar, milk, melted butter, and vanilla until smooth. Add more milk or powdered sugar to adjust to your preferred consistency.
14. Evenly divide the glaze into 3 separate bowls, leaving one third unflavored.
15. In one bowl, mix in
Suncore Foods® Cerise Prickly Pear Powder and in the remaining bowl, mix in
Suncore Foods® Purple Sweet Potato Powder.
16. Top the Purple Funfetti Focaccia with the 3 glazes and let it set for at least 30 minutes. Serve and enjoy!
