Taro Purple Sweet Potato Blondies:
190g browned butter
170g light brown sugar
140g granulated sugar
2 large eggs + 1 yolk
2 tsp vanilla
28g Suncore Foods® Purple Sweet Potato Powder
185g all-purpose flour
½ tsp fine salt
1 tbsp + 1 tsp milk (20g)
1 tbsp Suncore Foods® Lilac Taro Yam Powder
1 tbsp Suncore Foods® Purple Sweet Potato Powder

Milk Frosting:
85g butter
120g white chocolate
30g heavy cream
2 tbsp Suncore Foods® Purple Sweet Potato Powder
1 tsp vanilla
Pinch salt
120g powdered sugar

1. Blondies — Brown the butter. While still warm, whisk with both sugars until glossy in a mixer. In a medium separate bowl mixed together dry ingredients: flour, purple, sweet potato powder, taro powder, and salt. Set aside. Whisk eggs and yolk into the sugar mixture for 4–5 full minutes. Towards the end add milk, vanilla. Fold in dry ingredients gently. Spread into a parchment-lined 9x9 pan. Tap the pan firmly on the counter a few times to remove large air bubbles. Bake at 325°F for about 30–36 minutes. Allow to cool fully in the pan.
2. FROSTING — Melt the butter and white chocolate together until smooth. Whisk in the cream, vanilla, salt, Add powdered sugar gradually until you have a thick, pourable frosting similar to warm ganache. Divide the frosting keep 2/3 white and in a separate bowl mix 1/3 of the frosting with purple sweet potato powder. Pour the white frosting over completely cooled blondie. Dot the purple frosting on top of the white use a toothpick to swirl or draw lines through the frosting to create a marbled effect.
3. Let set at room temperature for 1–2 hours or refrigerate for about 20 minutes.
4. For serving remove the edges and cut into 9 bars.
